Jam On

When strawberry season rolls around you can be sure my family will be hitting up our local stand almost every other day (seriously).  It's only a minute from my house, and oh so yummy!  I realized it had been a while since I made freezer jam and I needed a couple of gifts, so I decided to go for it.  Now, as everyone knows, freezer jam is so, so, good (almost like candy) and verry easy to make.  I've had a couple of friends say "I don't know how to do that" so let me tell how........Clean, cut, and mash strawberries until you have 4 cups.  (measurements are important here)
Mix 1 1/2 cups of sugar with 1 packet of fruit pectin. (again, measurements. level your sugar with a butter knife.)My all time favorite is Ball brand Freezer Jam fruit pectin.  It uses half the sugar as sure-gel, and taste better too!
Mix it all together and stir for 3 minutes.Ladle into jars and store in your fridge for 3 weeks or freezer up to a year.

I made a gift basket for Makayla to take to her teacher for teacher appreciation day.  It was a pretty amazing thing, since I only had an hour to make the jam, wrap it up, and get to Makayla's school.  See, it is too easy... mash, measure, mix..... not to complicated right?
